Choc Raspberry Protein Pancakes!

INGREDIENTS

  • ¾ cup spelt self-raising flour (or gluten free self-raising flour)

  • 3 tbsp cacao powder

  • 2 tbsp Raw Protein Isolate Choc Coconut

  • 1 ripe banana

  • 2 organic eggs, separated

  • ¾ cup coconut milk (or oat milk)

  • 1tsp coconut oil (to cook)

DIRECTIONS

  1. Combine dry ingredients in a mixing bowl, mix well.

  2. Then add remaining ingredients (except egg whites) to a blender, blend until smooth. Add to fry mixture, mixing well.

  3. Beat egg whites until firm peaks form and then gently fold into the pancake mixture

  4. Place coconut oil in a non-stick pan and allow to melt over low-medium heat.

  5. Add a small amount of the pancake mixture and leave to cook for 1-2 minutes (or until bubbles start to form). Flip and allow the other side to cook for another minute or so. Repeat this process for the rest of the mixture.

  6. Stack pancakes and serve with raspberry coulis, fresh berries, choc tahini sauce and/ or coconut yogurt.
